Our Pond


We spent the better part of the weekend cleaning up the pond area and Kevin built a little dock out of pallettes. Pretty cool huh. The kids have really, really been enjoying it. The pond is all of about 18 inches deep. Josh found that out the hard way, by falling out of the little dingy boat. Hee Hee. It's been fun but the snakes will be out soon, yikes!

Train Ride


We all drove to a larger town nearby and rode on this little train!
It was COOL! That little train hauled butt! Kinda spooky!

Pop Up Rolls

These “rolls” are so, so easy!

Pop-Up Rolls
1 ½ c. self rising flour
3/4 c milk
3 T sugar
1 ½ T mayonnaise

Stir together place in muffin cups Bake at 375 for 18-20 minutes.

Variation:
I also make some similar to Red Lobster by adding 2 T garlic seasoning, ½ stick butter and 8 oz shredded cheddar cheese before mixing. MMMmmmmmm!

Hushpuppies

Hushpuppies
source

1-1/4 c yellow corn meal
1/2 c flour
3 tsp baking powder
1 tsp sugar
Pinch salt
1 tsp black pepper
1 onion diced very fine
1 egg beaten
1/2 c milk
1/2 c whole corn
1/4 c green onion or chopped jalapenos

Mix corn meal, flour, baking powder, sugar, salt and pepper. Blend well. Add onion, egg, milk, corn and green onion/jalapenos. Mix until well blended. Using double spoons or an ice cream scoop, sample one pup in a 350 degree deep fryer. Adjust seasonings and continue to fry away.

I didn’t have time to say “Happy Birthday” to Kiera like I’d like so here it goes (a little late).

Kiera,

Happy Birthday Sweetie. You and I have been through A LOT since you were conceived. You fought cancer with me before you were even born. We had surgery together. We made you come into this world a little early so I could begin chemotherapy and radiation. You were such a very, very good baby. You snuggled with me through my chemo downs. You accompanied me to all of my appointments and all the nurses and doctors completely fell in love with you. You came to almost all 38 radiation treatments with me and stayed with the nurses and receptionists while I had my treatment….they actually fought over who got to watch you! All five of your siblings completely adored you and still do.

You really have completed our family. I cannot imagine my life without you! You are a sweet, adorable awesome, little angel. Daddy and I are so happy you have come into our lives. We
